An éclair is an oblong pastry made with choux pastry (the same dough used for profiteroles). The dough is baked and, once cooled, the pastry is filled with one of our delicious flavored creams or crème patisseries and topped with icing.

Fun fact: Eclair means “flash of lightning” in French, and while the origin of the name is a bit unclear, many think it comes from pastry chefs joking that these treats are often eaten “in a flash”!
